


The Extra Virgin Olive Oil Verde Esmeralda Red Diamond Edition is an EVOO produced with olives of the Royal variety.
Royal, is an autochthonous variety of the Sierra de Cazorla. It is a variety of high and constant production, the olives provide low oil content but of extraordinary quality.
The extra virgin olive oil of the Royal variety is one of those minority privileges due to the scarce production of this type of olive.
The Extra Virgin Olive Oil Verde Esmeralda Red Diamond Edition is an EVOO produced with olives of the Royal variety.
The harvest of the olives necessary to produce "Red diamond" takes place between 10 and 30 October, depending on the year and the ripening of the fruit.
Due to the fact that the month of October registers daytime temperatures around 30º, the olives are collected during the night to ensure that the temperature of collection and subsequent grinding is below 20ºC.
It is considered, without margin of error, as one of the great gourmet oils that can be tasted among the different varieties.
Verde Esmeralda collects its olives from a selection of the best trees among more than 78,000 olive trees, for this strict control of all cultural practices is established for the cultivation of olive trees.
From the moment it begins to flower, through the setting of the fruit and all its development in the tree, all the variables that affect the quality of the fruit are controlled.
FLAVOR |
Very light in bitter, while the spicy is somewhat more prominent, but very delicate and late. Great harmony, medium structure, almond aftertaste and good persistence. |

The nose has an intense fruity green olives and great complexity of herbal and fruit tones, highlighting in the foreground the green apple, the green banana and the almond. In the background, citrus tones remind us of the leaf of the lemon tree and the green spike.. |

It is ideal for grilled vegetables, pasta, mountain meats, blue fish such as cod, carpaccio and tataki tuna, salmon or seafood, delicious with eggs and potatoes. |
