The secret of the superior quality of Palacio Oliaxi Premium Olive Oils lies in its location, its special collection and its authenticity as it is unique in its kind.
Their olive trees are located in the farms that they call the "Golden Triangle", in the Estepa region, in southern Spain. Due to its characteristics of climate, agriculture and soil quality, it is an ideal land for olive cultivation.
Olives are only harvested on full moon nights, as the Romans did, an ancient method that achieves an inimitable flavor. All Palacio Oliaxi oil comes exclusively from the full moon harvest of that first harvest night. With them, an extra premium cold pressing oil is produced.
The plot of 3,800 olive trees has low production due to ecological agriculture and the application of a formula that, while impacting on performance and business profit, extracts the true essence of the flavors of olive juice. For this, five olive trees are necessary to collect 100kg of olive, from which only 11 liters of oil are obtained, which makes it unique and exclusive of its kind.
