The harvesting process is totally handmade, taking care of the fruit from the first moment: the olive.
The harvest is made during the months of October and November, periods in which the olive is greener, obtaining therefore very fruity and intense oils.
FLAVOR |
The palate has a fresh and smooth and very balanced in when bitterness and itching. Its aftertaste is persistent with complex and very pleasant notes. Very round in its essence. |
AROMA |
The nose is spicy and complex. Of intense fruity of healthy, fresh and green olives with aromas that remember in the first place the tomato, freshly cut grass and mint, and in the background, more fruity aromas such as the green apple and the banana peel. |
ACIDITY |
Expressed in free fatty acids, it does not exceed 0.1º. |
PAIRING |
It combines perfectly with stews of meat and fish, ideal for pasta dishes and raw vegetables. |
