Unlike the Verde Esmeralda Luxury, the olives used for the production of the Premium are harvested and ground during the six days following the first night of harvest.
The healthy olive is picked at its optimum moment of maturity, it is extracted in cold to preserve all the aroma and flavor of the oil, it is an oil with body, soft and balanced, with green leaf aromas.
This Premium EVOO from the Picual variety is very rich in oleic acid, surpassing oils of other varieties by almost 10%. Oleic acid and polyphenols are associated with a reduction in the risk of cardiovascular and liver diseases.
It presents a high composition in fatty acids as well as a large amount of natural antioxidants.
Its high content of polyphenols, make Verde Esmeralda premium extra virgin olive oil in one of the most stable EVOOs that exist, which means a longer period of preferential consumption and an excellent behavior against thermal use in the kitchen.
